My friend kept asking me to make her a snood. First I had to figure out what it was...I ended up doing one crocheted (I am only a novice crocheter)just freestyle,no pattern. I don't think it was quite what either of us had in mind but she thanked me and wore it anyway.

I've spun up yarn for one, and I plan on knitting one for myself, no pattern.

My guess is that you'll run into big trouble finding patterns for them, because by the time knitting machines were available, snoods had mostly gone out of style.

You might have some luck if you do searches for reenacters or similar historic sites.
